Indian Scrambled Eggs
I found this in a 1960’s book about India. We tried this, it’s outstanding and unusual.
6 eggs
¼ cup milk
½ tsp salt
¼ tsp pepper
3 Tbsp ghee (clarified butter)
1 tsp fresh ginger root
3 Tbsp finely chopped onions
3 Tbsp finely chopped cilantro
¼ tsp turmeric
2 tsp finely chopped hot pepper (I use 1 tsp)
½ tsp cumin
Lightly beat the eggs with the milk, salt, and pepper. Use the ghee to sauté the ginger, onion, cilantro and seasonings, very briefly. Add the egg mixture and scramble until softly done. Serve with Naan.
